Naturally Processed Ethiopian Heirloom Varieties 

The Origin
The Yirgacheffe region of Ethiopia is one of the most famous and distinguished coffee regions in the world. Known for its natively grown Ethiopian Heirloom variety, it has been trademarked by the government to promote broader global recognition. Within the region lies the Wenago woreda (district) with fertile soil, ample rain, and elevation ranges over a mile high at 5,900 feet.

The Cactus
The Chain Fruit is easily recognized by the chains of conical, green, spineless fruit which hang down from the end of each stem, remaining there for several years. The plant is densely covered by white or pale yellow spines, variable in length, and has many short joints, up to around 6 inches long. Mature plants develop a tall stem, on which the spines become brown, black, or fall away, and the cactus may reach heights of 12 feet or more. Like some other cholla species, the spiny stem segments are very easily detached, adhering to anything that moves past. The pinkish flowers are less prominent than those of other cholla species since they open late in the day and close early in the morning.

The Origin
From Guatemala Azuvar Morena,
 a micro-lot coffee from three fincas (farms) in Guatemala: San Jose Buenavista, El Bonito, and Joya Grande. Elevation combines with volcanic soil and large, old shade trees to produce an excellent cup that lives up to its name: Azuvar Morena. That’s Spanish for brown sugar.

The Cactus
The Giant Saguaro is native to the Sonoran Desert and is the cactus most people think of when they hear the word. They soak up rainwater and consume it slowly- savoring every last drop. Their bright, white blossom is the state flower of Arizona.
